Gluten Free Slow Cooked Lamb Massaman Curry

I love the smell of a slow cooked curry, especially on rainy days. A curry like this is great as you can place everything in the slow cooker and let it cook for the afternoon while you relax and watch a movie 🙂

Ingredients

2tsp Valcom Massaman Curry Paste

500g Lamb cubed

1 knob ginger grated

3 cloves of garlic crushed

2 onions chopped

1 tin of coconut milk

2 sweet potato chopped

Method

In slow cooker pot add onions, garlic, ginger & lamb with curry paste & cook until meat is tender (3-4hrs)

About 1 hour before serving add tin of coconut milk and sweet potato and keep cooking until sweet potato is cooked through.

Serve with rice & banana (optional)
