Gluten Free Chicken, Mango and Coconut Curry

Living in a tropical city like Queensland, I look forward to summer as it brings one of the best tasting tropical fruits – mango. What I love about mango is the sweet taste whether eaten on its own or mixed through a salad or curry like this.

Mango’s and coconut milk go really well together to make this beautiful curry, that’s guaranteed to have guests going back for more.

Ingredients
2 chicken breasts diced
2 onions sliced
1tbs Valcom Panang Curry Paste
flesh of 2 mango’s
1 tin coconut milk
1/2 can water

Method
Saute onions in olive oil, add chicken and cook for 3 minutes.
Add 1tbls Panang curry paste & cook for 1 min
Add 1 can of coconut milk, 1/2 can of water and the flesh of 2 mango’s.
Simmer for minimum 1 hour
Serve with rice
