Boerewors with red wine and tomato casserole (Bangers and Mash)

DSC_0662(1)This is one of my favorite dishes. The sausages used in this are traditional boerewors (South African sausages) and are gluten free! What I love about Boerewors is how much flavour they have. The coriander flavored sausages combined with the rich tomato sauce, makes it one tasty casserole. I made this for a family gathering one day and my nephews came back for second and even third helpings as they loved the flavor of this casserole.

Ingredients

1tbls olive oil

2 med onions

Cracked pepper to taste

Boerewors chopped into meatball size chunks

2tsp crushed coriander seeds

2 cans of diced tomato

1 can of water

1 gluten free stock cube (vegetable or chicken)

1/2 glass of red wine

Method

Sauté onion & cracked pepper in oil until transparent, add boerewors and fry until just brown.

Add coriander and fry for 1 min.

Add 2 cans of tomato with 1 can of water and 1/2 glass of red wine, bring to the boil then allow to simmer for minimum 1 hour.

Serve with rice or mash potato.
