Gluten Free Spicy Potato Salad

Whenever I think of BBQ’s, picnic’s & salads I always imagine a potato salad eaten with your char-grilled/BBQ steak, chicken, sausage or grilled fish. This particular potato salad is spicy and full of flavour but perfectly compliments any char-grilled or BBQ meat. It can be prepared ahead and left in the fridge for a couple of hours or even overnight.

Ingredients

Approx 1kg white Potatoes chopped & steamed*

Sea salt to taste

Cracked pepper to taste

3-4 dessert spoons Gluten Free Egg Mayonnaise

1/2 Red Onion finely diced

1 handful Coriander finely chopped (inc stalks)

1/2 – 1 Red Chilli (de-seeded & finely chopped, optional)

4 hard boiled eggs cut into quarters

When potatoes are just cooked, cool and add salt & pepper to taste.

Add mayonnaise, coriander, red onion, red chilli.

Add hard boiled eggs and toss gently to combine. Add more mayonnaise if desired.

Serve with your favourite BBQ meat.

*Steaming potatoes ensures they are less water logged & cook quicker.
