Do you need a change from boiled potatoes or mash or tasteless frozen fries (which are not on my list of foods too consume being gluten intolerant)? Well these Moroccan Fried Potatoes are a modern twist on fries and I guarantee these taste a whole lot better. This was the very first meal that my partner Piet cooked for me, before we became a couple, and I loved it. This was one (of the many reasons) why I fell in love with him, his cooking, turning simple vegetables into tasty meals.
The trick to this is steaming the potatoes first, not boiling as you don’t want them to be waterlogged. Frying them on a normal stovetop works, but on a gas stove top, we have a 4 burner BBQ with gas stove, gives an even better result.
This would be a hit with friends at a BBQ served with steak (or without if you happen to be vegetarian) and beer or your preferred alcoholic drink.
Approx 1 kg white potatoes, washed and chopped into wedges approx 1cm width
1 Onion peeled and sliced into rings
Masterfoods Moroccan Seasoning
Sea Salt & Cracked Pepper to taste
Place the chopped potatoes and onion in a steamer and cook until just cooked through, you don’t want them too soft as they will fall apart when frying
Once potatoes and onion are cooked place in hot oil seasoned with Moroccan Seasoning, salt and pepper and fry until crispy, tossing occasionally to keep them evenly coated
Serve with your favorite char grilled steak or meat
