These tuna patties are so delicious and easy to make and best of all they are gluten-free and Paleo. Perfect for a Saturday lunch
750g sweet potatoes peeled and chopped
3-4 green sections from spring onion finely diced
4 button mushrooms finely diced
handful coriander finely diced
1/2 onion finely diced
1 chilli (optional)
425g can of tuna, drained
Sea Salt and Cracked pepper to taste
Almond flour for dusting (optional)
Mixture makes approx 12 patties depending on size
Peel sweet potatoes, cut into chunks and steam until tender.
While the sweet potato is cooking, add all the other ingredients to a bowl
When sweet potato is cooked, drain and add to other ingredients
Mash until completely combined
Heat olive oil in frying pan on low/medium heat
Shape tuna mixture into small round, roll lightly in almond flour and then place in the heated pan.
Cook on medium/low heat. Keep an eye on them as you don’t want to burn them.
Once cooked to your preference, flip over to cook the other side.
Once cooked place the patties on paper lined tray and place them in a heated oven whilst you continue shaping, dusting in almond flour and cooking the other patties.
Serve with steamed vegetables or salad of your choice and enjoy.
