I love Lindt chocolates, dark chocolate, white chocolate, any flavor really, I’m not fussy!
This year my partner and I were doing some shopping in Coles and at the end of a particular aisle – conveniently located, I spotted Lindt Balls but not the normal ones, Peanut Butter Lindt Balls!! I was so excited. They also had coconut flavored ones, which were okay but I much preferred the chocolaty, creamy with a hint of salt Peanut Butter flavored Lindt Balls.
Whilst looking for some Christmas recipes, I came across this recipe on one of my favorite sites for Peanut Butter Truffles.
They may not be Lindt Peanut Butter Balls but this recipe came pretty close and was easy enough to make.
They were a big hit, even for a fussy family member who ended up consuming at least 3!
180g Cadbury Melts white chocolate
3/4 cup Kraft gluten free crunchy peanut butter
1/3 cup Pauls thickened cream
sprinkling of sea salt
200g Cadbury Melts dark chocolate
50g Cadbury Melts milk chocolate
Place white chocolate, peanut butter and cream in a saucepan over medium heat,stirring until chocolate is starting to melt, remove from heat and stir until smooth. Stir in salt
OR place in microwave-safe bowl. Microwave on medium (50%) for 1 to 2 minutes, stirring every 30 seconds with a metal spoon until smooth and combined. Stir in salt.
Refrigerate for 3 hours or until firm.
Line a tray with baking paper. Using 2 level teaspoons of peanut mixture at a time, roll into balls. Freeze until firm.
Place dark chocolate in a saucepan over medium heat,stirring until chocolate is starting to melt, remove from heat and stir until smooth
OR place in a heatproof, microwave-safe bowl. Microwave on medium(50%) for 1 to 2 minutes, stirring every 30 seconds with a metal spoon, or until melted and smooth.
Using a fork, dip truffles in melted chocolate, shaking off excess. Return truffles to tray. Refrigerate until set.
Place milk chocolate in a heatproof, microwave-safe bowl. Microwave on medium (50%) for 1 minute, stirring after 30 seconds with a metal spoon, or until melted. Spoon chocolate into a snap-lock bag. Snip off one corner and pipe chocolate over truffles. Refrigerate until set. Enjoy!
