Summer Lovin – Sun, Surf and Salads

First day of January 2014 saw us heading to the beach for some sun, surf and sand. In Queensland we are lucky to have such wonderful beaches stretching from the Gold Coast to the Sunshine Coast and beyond. Today the water was beautifully cool and refreshing.

What I also love about summer is enjoying refreshing salads. They don’t take much time to prepare and can be enjoyed with your favorite meat; steak, chicken or prawns.

Below are recipes for 2 of my favorite quick and easy summer salads.

Sweet Potato Salad

Ingredients

2 large sweet potato roughly 500g peeled and chopped into 1cm chunks

1/2 large red onion diced

3-4 stalks of coriander chopped

1-2 tbls of gluten-free Mayonnaise. My preferred option is S&W Mayonnaise available from Coles and Woolworths as I think it has the best flavor.

Method

Steam sweet potato until cooked, you still want some firmness, otherwise if it’s too soft it will turn mushy

Place in a bowl and allow to cool

Add red onion, coriander and mayonnaise and combine.

Refrigerate until ready to serve.

Caesar Salad

2 rashers of bacon sliced

1 chicken breast sliced and marinated in African Piri Piri BBQ Spices (available from Coles)

100 g baby spinach leaves

2 tbls S&W Mayonnaise

Grated cheese

Optional Extra Slices of Brie Cheese

Method

Pan fry or chargrill chicken until cooked – remove from heat

Cook bacon until crispy – remove from heat

Place all ingredients in a bowl and toss until combined

Serve with Brie placed on top and enjoy
