I’m a big fan of Chef Pete Evans, a true blue Australian. I really like and enjoy his style of cooking. I also enjoy watching him in MKR – My Kitchen Rules, an Australian TV cooking show alongside French Chef Manu Fieldel.
Pete Evans will soon be releasing a Paleo inspired cook book called Healthy Every Day which I can’t wait to get my hands on a copy.
Inspired by Pete Evans, my lovely partner Piet, made our very first gluten free pizza base the other night. The recipe below is taken out of his cook book Cook with Love by Pete Evans
I have tried different gluten free pizza’s from take away places such as Pizza Capers and Eagle Boys but this I believe is the best tasting gluten free base.
We were also able to obtain a pizza stone for a cool $10, which is a great way to cook your bases on, rather than just a pizza tray as it helps crisp up the base and stops it going soggy.
Gluten Free Pizza Dough
450g gluten free flour, plus extra for dusting. We used Orgran Gluten Free Flour
1/4 tsp bicarb of soda (baking soda)
1 tsp salt
2 tsp sugar
2 eggs slightly beaten
80 ml extra virgin olive oil, plus extra for greasing
140 ml lukewarm water
If using a pizza tray lightly grease a 30cm tray
If using a pizza stone, follow manufactures instructions on pre-heating.
Sift together the gluten free flour, bicarb of soda, salt and sugar into a large bowl.
In a separate bowl, mix the eggs, olive oil and water.
Add to the dry ingredients and use a fork to incorporate, then use your hands to bring the mixture together to form a dough.
Divide dough into 4 portions roughly 190g each.
Lay down a clean dry tea towel and dust with extra gluten free flour.
Working with one portion of dough, use your hands to gently press and flatten the dough as much as possible. Try to keep the dough as round as possible and then using a rolling pin, roll out to fit the pizza tray or stone.
You will find that as this dough has no gluten, the dough will not have the elasticity of regular pizza dough and will therefore not be as easy to handle.
Top with your toppings of choice
